Week 1: What Is Plant-Based Nutrition?
Discussion of key vocabulary, common myths and misconceptions, definition of plant foods.
Also, overview of health benefits, relationship to chronic disease, and links to longevity and ease
Week 2: Nutrients on a Plant-Based Diet
Explanation of macronutrients: carbohydrates, protein, fats (plant sources), as well as key micronutrients (Iron, Calcium, Vitamin B12, Omega-3 fatty acids, Zinc and iodine).
Also, discussion of protein quality and amino acids
Week 3: Health Benefits of Plant-Based Nutrition
Discussion of major health issues: cardiovascular health and cholesterol, blood sugar control and diabetes prevention, gut health and the microbiome, weight management and metabolic health, cancer risk reduction
Week 4: Practical Application & Sustainable Habits
Suggestions for grocery shopping on a plant-based diet, budget-friendly plant-based eating, eating out and social situations, transition strategies (gradual vs. full switch), cultural and personal flexibility
About the instructor: Jenny Cheifetz, I am a certified life and breathwork coach and live a certified vegan lifestyle as a coach and educator. I am a passionate ethical vegan and very focused on the health benefits of plant-based living. I also host a podcast. “The Flirty Vegan” which is 100 episodes old and focuses on vegan values, mission and inspiring stories.
